snacks
stella's sour apple snack.
So easy...
Cut an apple into child-freindly slices, then squeeze a few drops of lemon or lime juice on each piece and serve! Add as much juice as you like!

peanut butter balls.
this is my post yoga treat when i'm in between classes...
contains lots of protein and good energy!
you can play with the ingredients to suit your preferences... this is my basic recipe:
1/2 cup peanut butter (i use a natural smooth butter with no salt added... organic is nice too!)
1/3 cup honey
mix peanut butter & honey together in a bowl before adding the following ingredients:
1/2 cup good quality oats (i use a whole grain blend that contains flax seed)
1/4 cup pumbkin seeds (or sunflower or sesame)
1/4 cup unsweetened shredded coconut
a handful of dried cranberries (or sultana raisins)
a handful of dark chocolate chips
add all the dry ingredients to the honey butter and mix well. you might have to add a little bit of peanut butter if you've gotten carried away with your dry ingredients... all measurements above are approximate!
roll tablespoonfuls of the mixture into bite size balls and store in an air-tight container in the fridge. so yummy!

white chocolate chunk almond balls
these are just the sweetest, most powerful energy treat I can think of... full of nuts & seeds... honey & white chocolate
you can use any combination of nuts & seeds... and measurements are all approximate. if the mixture is too dry, add almond butter... if it's too sticky, add more seeds.
1/3 cup almond butter
1/4 cup honey
1/2 cup white chocolate chunks
1/4 cup unsweetened shredded coconut
1/4 cup raw pumpkin seeds
1/4 cup roasted unsalted soy nuts
1/4 cup raisins
1/4 cup dried chopped apple rings
1/8 cup flax seeds
1/8 cup sunflower seeds
you can use any combination of nuts & seeds... and measurements are all approximate. if the mixture is too dry, add almond butter... if it's too stickey, add more seeds.
mix together the honey & almond butter until smooth... then add all the other ingredients and mix well. let mixture sit in the fridge for an hour. make large balls with mixture and store in an airtight container in the fridge.
these balls are awesome any time! breakfast on the go... in between yoga classes... desert... midnight snack... any time you need a little dose of sweetness & protein. yum!
