date squares
date squares seem so old school to me... they remind me of my childhood... I think they were always my dad's favourite treat...
this is an updated version of the sweet desert that you can enjoy as a snack on the go... or even for breakfast.
2 cups pitted dates
1 cup water
2 tbs lemon juice
2 cups good oats (I use a 12 grain oat mix)
1/2 cup flour (I used whole wheat... try your fav)
pinch of salt
2/3 cup honey
1/4 cup coconut oil
1/3 cup butter
1/2 cup Demerara sugar (brown sugar)
3/4 cup good oats
1/2 tsp baking soda
pinch of salt
heat the oven to 350
in a sauce pan over medium low heat, combine dates, water & lemon juice. simmer for 5 - 10 mins, stirring occasionally & mashing with a spoon, until smooth & easily spreadable. set aside.
in a bowl, combine oats, flour & salt. In a separate bowl, mix honey & coconut oil. fold oil mixture into oat mixture until just combined. press into the bottom of a 9 x 9 inch square pan. top with date spread.
melt butter in a sauce pan. in a bowl, combine brown sugar, oats, baking soda & salt. pour melted butter over mixture and stir until combined. Sprinkle over date spread. bake for 30 mins.
cool in pan & cut in

apple cake
i had a bunch of organic apples to use up this week, so i decided to try this recipe out... it's very easy and super yummy... but i really wasn't sure it would be all that great when i was mixing it up... you'll see... it's almost a cookie-cake!
i used my food processor to thinly slice the apples... otherwise, chop them up into small pieces...
1/2 cup unsweetened apple sauce
1/2 cup vegetable oil
2 eggs
1 cup of brown sugar
1 tssp vanilla
2 tsp cinnamon
1 tsp baking soda
1/2 tsp salt
2 cups flour
4 cups thinly sliced apples
directions...
preheat the oven to 350 degrees F
lightly grease & flour a 9 inch round cake pan
beat the eggs, oil, apple sauce, brown sugar & vanilla together
add the flour, cinnamon, baking soda & salt and mix well... I found the batter to be very thick at this point... I think that normal...
add the apple slices & mix them in
spread batter into pan & bake for 45 - 50 mins or until a knife inserted into the cake comes out clean.
serve with vanilla ice cream or whipped cream... or enjoy with a cuppa

banana almond (chocolate chip) loaf
ok... so the chocolate chips are optional... and i suppose that you could also use apple sauce instead of bananas, but i had a couple ripe ones so this is the recipe i went with :)

3/4 cup brown sugar
2 large eggs
1 3/4 cups ripe bananas, mashed
1 tsp vanilla extract
1 1/4 cups whole wheat flour
1/4 good oats
1 tbsp ground flax seed
1 tsp each baking soda & baking powder
1/4 cup raw almonds
1/4 cup chocolate chips (optional)
preheat oven to 350.
in a large bowl combine the first 5 ingredients and mix well. i use the back of a fork to mash the bananas and the same fork to blend the first ingredients together. the mixture will be lumpy. add the flour, oats, flax seed, baking soda & powder. fold & combine until just moistened. stir in the almonds and chocolate chips, if using, and pour into a lightly oiled 9 X 5 inch loaf pan. bake for 45 mins to an hour or until

softest oatmeal cookies
i made these last night with a little help from Stella Moon... it was a special request and so very chewy & yummy!
heat the oven to 375. line a cookie sheet with parchement paper.
1/2 cup of butter
1 cup of brown sugar
1 egg
1 tsp vanilla
1 cup all purpose flour
1 1/2 cup good quality oats
1 tsp baking soda
1/2 tsp salt
1/2 tsp cinnamon
in a shallow bowl, beat sugar with a hand mixer until soft. add sugar and cream. add egg & vanilla and beat for another minute or so until fluffy & light.
in a second bowl, mix all remaining ingredients together. slowly incorporate dry ingredients into wet. form dough into 12 large balls and place on cookie sheet. flatten with the back of a fork. bake for 8 - 12 minutes and enjoy!

harvest raw apple pie
yummy... especially with local hand-picked apples (thanks to stella moon, sean & tara)
filling:
4 apples
juice from one lemon
2 tbs honey
1 tbs cinnamon
1/2 tsp nutmeg
1/2 tsp ground ginger
slice the apples thinly using a food processor... using the slicing attachement. mix the lemon juice, honey & spices and add the apple slices. let the apples sit for 20 mins.
pie crust:
1 cup dried coconu
1 cup hempseed
1/2 cup dates
1 tsp vanilla
1 tsp cinnamon
place all pie crust ingredients in the food processor. pulse until teture is fine and sticks together. save 2/3 cup of crust for the topping... and mold the rest into the bottom of your pie plate.
saving as much liquid as possible, place apple slices on top of pie crust. the remaining liquid can be set aside to drizzle on top of the pie when serving.
crumble topping:
