apple beet salad
my new favourite salad
1 large bunch of fresh organic red beets 1 large bunch of fresh organic golden beets good olive oil to coat the beets 1 granny smith apple 1 crispy red apple of your choice 1/2 cup unsalted pistachios dressing 1/3 cup of good olive oil 1/4 cup red wine vinegar 1/8 cup water salt & pepper preheat oven to 400 wash and quarter the beets, leaving the skin on. toss with olive oil to coat. lay them on a baking sheet and roast for 40 minutes or until tender. remove the beets from the oven and let them cool. once they are cool enough to handle, wipe the skins off using papper towel. slice each quarter in half and place in a large salad bowl. slice apples into thin slices and add to the beets. add the pistachios and the dressing, stir and cool. serve as is, or on a bed of fresh greeens. so good! |
